
The further along I get in this jounrey, the more I realize that it’s only ever been about the way I feel. Food is interesting in that way. What your palet desires is constantly changing. Constantly looking for new flavours and forms. All the while the quality of the ingredient remains integral. It never mattered what hand made it, as long as each person instilled love and appreciation into it on its journey from the field to the plate. I want to hold that intention to the bright light as the page turns and this new chapter unfolds. It’s no longer right to cater to the mainstream. This is a de-centralized marketplace, for the people.
